Sattu Ladoo Recipe

What Is Sattu?
Sattu is roasted Bengal gram (chana) flour, traditionally used across Bihar, Uttar Pradesh, and parts of South India. It's high in protein and fiber, has a nutty aroma when roasted, and works beautifully in both savory and sweet preparations.
Ingredients:
(Makes 15-20 ladoos)
1 cup = 250ml
• 1 cup sattu (roasted chana flour)
• ½ cup jaggery powder (adjust to taste)
• 7 tbsp ghee.
Method:
• Heat a heavy-bottomed pan on low flame. Add sattu and dry roast, stirring continuously, for 3–5 minutes until it turns slightly deeper in color and gives a nutty aroma.
• Now add little by little ghee mix well until you ll get a smooth texture then switch off the flame..Let it cool completely.
• After cools completely, now add jaggery powder and you can add cardamom powder also but here I didn't add..
• Mix well with your fingers or a spoon, breaking any lumps. The mixture should feel moist and hold together when pressed.
• Shape the ladoos. Roll tightly between your palms to form smooth, round ladoos.Press gently so they are compact and don't crumble.
• store it in a airtight container at room temperature for up to 15 days.
Tips for Perfect Sattu Ladoo:
• Roast on low flame: High heat can burn sattu and make it bitter.
• mixture should cools completely or else jaggery melts and you cannot make Shape.
• Jaggery quality matters: Use good-quality, dry jaggery powder, if it's sticky, reduce ghee slightly.
