Pulao Recipe
An easy and simple flavoured rice recipe made with long-grain rice, a choice of vegetables, and fresh herbs. It is one of the popular rice variants or choices for many Indians and is often served for lunch and dinner. The simple pulao recipes do not contain all the required flavour and spice and can be served as it is, but they taste great when served with simple yoghurt raita or curd.

Here, adding vegetables is open-ended, and you can add them as per your preference.
INGREDIENTS:
Serves: 6
1 cup= 250ml
• Onion- 1 (medium size) sliced
• Grated coconut- 3/4 cup
• Ghee - 3tbsp
• Coconut oil- 3tbsp
• Cashew- 1 handful
• Cinnamon- 2 inch
• Green chilli- 3
• Ginger garlic paste-1 tsp
• Mint leaves- 1 handful
• Coriander leaves- 1 fist
• Green peas- 1 cup
• Mixed Vegetables- 2 cup
• Soya chunks- 2 cup, soaked
• Rock salt - 1 tbsp
• Rice- 1 1 /2 cup
• Water - 3 cup
METHOD:
• Firstly slice the onion and grind the grated coconut into a fine paste.
• Heat the cooker, add ghee and oil, add cashew, fry a minute. Then add sliced onion, cinnamon, green chilli fry it. Then add ginger garlic paste. Fry for a minute.
• Then add mint leaves, coriander leaves and green peas. Fry for a while then add mixed vegetables here I used carrot, beans and capsicum ( red and yellow). Then add soaked soya chunks (soak for 1/2hr). Mix everything.
• Then add salt and grounded coconut paste mix it. Then add water, when it starts boiling add rice. Close the lid and make 2 whistles.
• When it cools down mix everything. Now pulao is ready.
